Every Lebanese and Syrian person says their mum makes the best Fattouch in the world, and we don’t doubt. This fresh, crisp salad was first popular in Lebanon and Syria (where else?) but you can now order it at most Middle Eastern restaurants. It goes down well as a starter or a side and we love serving it up with a hearty dish of roasted lamb or chicken.

Heading over to India, lip-licking Dahi Vadey is essentially lentil dumplings soaked in yoghurt tempered with spices. There’s work to do in this dish, but it’s well worth it as every step will enhance the rich flavour and it’s a real crowd-pleaser.

We’re talking about peppers of course and not stuffing  YOU! This easy and delicious teaser for the main course requires a good mix of vegetables and good old fashioned minced meat. Add rice or quinoa to give you a more wholesome dish or remove the meat altogether to make a veggie-friendly dish. Simples!  This recipe is ideal for using those leftover veggies that aren’t enough to make a whole dish but are the perfect amount for this stuffed pepper recipe.

We love a one-pot dish and this popular iftar staple is no different. Harees or Harissa is made from barley, wheat and chicken and is considerably light on the stomach. Depending on your palate, you can tweak the recipe and mix in more spices or ginger garlic paste to add an extra punch.

It takes a while to cook Harira soup but the prep and ingredients are fairly simple, so roll up your sleeves and  have a go at making this tasty Moroccan soup. Enjoy it with crispy toasted Arabic bread… great for dunking!
